Preparation: Rub both sides of a brisket or chuck roast with mixture. place in roasting pan and let it marinate for 30 minutes to an hour at room temperature. Roast uncovered at 350 degrees for one hour. Add enough beef stock to yield about one half inch of liquid in the roasting pan. Lower oven to 300 degrees and cover tightly. Continue cooking for 3 hours or until fork tender. Trim the fat and slice meat across the grain. Top with juice from the pan.
